As I have mentoned on my diabetic cook book blog, it is a struggle to find foods to eat that taste good and don't raise your blood sugar levels.
I usually cook up a large pot of something on Sunday's, that way I can take my lunch to work and I have control over my calories and food. There is a vending machine right outside of my office and it is my downfall if I don't have something healthy to eat. I will buy something from the machine. I struggle finding diabetic cookbooks and recipes. I am adding my own today.
I made this easy Chicken Chili on Sunday and it took 30 minutes from start to finish, I did let it simmer longer than 20 minutes. I like it to get a bit thicker.
